This is an opus that would make Andrew Usher proud: a selection of casks of whisky made from corn, rye, barley and red winter wheat, all distilled individually at Hiram Walker - some from a pot still, some from a column still, and all matured separately. The end game is a masterpiece of balance, flavour and finesse, with an average age of ten years and a deft synthesis of corn sweetness, spicy rye, hefty barley and wheated elegance. As classic and comforting as a piece of hot buttered cinnamon toast, with its grainy nose and mouth-watering palate of raisins, figs, roasted corn and wood chips. This is skilled blending and seamless joinery of grains in all its glory, demonstrating that Canada is more than worthy of a place on the world spirit’s stage.
