El Dorado’s standard 15 year old is finished in casks seasoned with white port, and it’s a worthwhile adventure for those who appreciate the deft interaction between wood and spirit, rum fan or not. Less sweet than the standard range, this is incredibly balanced and surprisingly dry, with none of the cloy one might expect from port, and a beautiful patina of spice, complemented by dried fruits, figs and 70% dark chocolate. The result is surprisingly un-Demerara, reminding more of Barbados than Guyana.
